Ms. Earnestine Smith, a Daufuskie native, works at the Old Daufuskie Crab Co. cooking her famous Daufuskie Deviled Crab — using four crabs in each dish and very little breading, along with a variety of different spices. Her family recipe is a closely guarded secret, but it’s her honest ingredients — along with a pair of very practiced hands — that create such a memorable meal. The Crab Co. also serves their Scrap Iron corn liquor, which the Gullah would sell in Savannah with scrap iron over the barrels, avoiding the attention of the revenue officers on River Street under the pretext of selling scrap.
